Ingredients:
1 t salt1 t garlic powder
1 t ground cumin
1/2 t dried oregano
1/2 t ground coriander
1/4 t ground cinnamon
1 (4 pound) boneless extra lean pork roast
2 bay leaves
2 C low sodium chicken broth
Directions:
- Mix spices together in a small dish
- Coat all sides of pork roast with spice mix
- Place bay leaves inside the bottom of your slow cooker & place the pork roast on top
- Pour chicken broth around sides of the pork, be careful not to rinse off the spices
- Cover & cook on low for about 10 hours, turning once during cooking
- Once pork is cooked tender, remove from slow cooker and shred with 2 forks
- Return shredded pork to remaining liquid in slow cooker and set to "keep warm" until ready to serve
